Homemade guacamole

This versatile avocado dish is light and lovely served with some carrot, pepper and celery sticks. It’s also really nice as an accompaniment to fajitas. Avocados are full of fibre and healthy fats so it’s great to include them in your diet.

Ingredients

2 avocados
1 small garlic clove, crushed
Juice 1 lime (or to taste)
Drizzle of olive oil
Chopped red chili, to taste
Salt & pepper
Coriander/spring onions/tomatoes , optional (we prefer it without!)
Method
Mash the avocados in a bowl. Combine with the rest of the ingredients and mix together.
Tip
If you return the avocado stone to the guacamole after it’s made, it stops it from turning brown so quickly.
